Is it possible to reach Outrun Aesthetic Cars in 2020?

Just wondering what modern vehicles might make for excellent Outrun cars, mainly I'm looking to get a car here soon.

As much as I'd love to get an 86 Corvette, they're just terrible in miles per gallon and generally antiquated.
